Jasmine Mitchell is the acclaimed winner of The Great British Bake Off 2025 capturing hearts and headlines with her exceptional baking skills, creativity, and inspiring journey. See her at the Festival of Food and Drink at Thoresby Park on Sunday 20th September.

At just 23 years old, Jasmine stood out from the moment she entered the iconic white tent — ultimately earning an impressive five Star Baker titles, multiple Hollywood Handshakes, and the coveted Bake-Off trophy after a breathtaking final. Originally from Edinburgh, Jasmine’s passion for baking was nurtured by family traditions and afternoons spent laughing and learning in the kitchen. A medical student balancing intense studies with her Bake Off journey, she brought precision, calm under pressure, and thoughtful flavour combinations to every challenge — culminating in a stunning show-stopping creation.

We get to know her better with our five quick questions…

What can people expect to see from you at the Festival of Food and Drink?

I am all about making delicious dishes without all the faff and complexity that often come with cooking and baking. I will be demonstrating a couple of straightforward dishes that you can easily replicate at home to bring people together around the table!

Baking can be both creative and technical – is it as scary as people think?

I think baking is a lot less technical than many people think. Once you have a good basic recipe, you can have a lot of fun experimenting with different flavours. I love to use my basic sponge recipe and then adapt it depending on what I have in my cupboards or the season. For example, in the autumn, I add a little cinnamon to the sponge and scatter some blackberries and apple slices over the top to make a delicious seasonal bake.

What is your go-to comfort food?

It depends on whether I’m looking for something sweet or savoury. A big bowl of pasta with lots of cheese on top satisfies my savoury tooth, but if I’m looking for something sweet, I’ll always go straight for ice cream, and lots of it!

What role does baking play in bringing people together in your own life or community?

The main reason I love cooking and baking is because I can use the food I create to bring people together. I live in London, where it often feels like everyone is very busy. I find that when people pull up a chair, sit at the table and eat together, deep connections begin to form. Community is something that I think is so important, and using food to help cultivate it brings me a lot of joy.

Nottinghamshire is home to the Bramley apple, and we are approaching apple season. What would be your recommendation for a dish featuring this ingredient?

When we’re in apple season, I make at least a couple of apple crumbles each week! I love to make mine with a combination of apples, pears and freshly grated root ginger.
