Lea WI – stuff your sausages!

There is only one thing better than a sausage and that is two sausages, especially when they are meaty and moist.

The Women’s Institute were sagely instructed when they attended the idyllic rural setting of The Lincolnshire Cookery School, where the workshop was to make a string of sausages from scratch.

Fiona Lucas, owner and teacher, explained: “We’re farmers so we understand the fundamental idea of field to fork. Our experiences and location inspire us to produce quality, tasty and ‘want more’ dishes and it’s a joy to share them with our students.”

The deluxe kitchen catered for the ladies to mince, mix and stuff their sausages with the finest pork and selected ingredients to make the sausages their own. Step-by-step tuition taught the knife skills and clever shortcuts known only to the best professional chefs. In these times of economic crisis, it’s useful to know how to make your food budget go further compared to expensive takeaways.

As well as working from her Lincolnshire base, Fiona welcomes the opportunity to go into schools where she educates children from the grass roots. She believes that everyone should understand the basics of good food: we all have to eat, so we may as well eat well. Which is what the ladies did when it was time to sample the sizzling sausage.
